Fish Cleaning and Marinating

    Clean the Fish

    Rinse the sport fish under cold water and remove any scales, entrails, or fins.

    Prepare the Marinade

    In a bowl, mix together the salt, lemon juice, olive oil, black pepper, and garlic powder.

    Marinate the Fish

    Place the cleaned fish in a shallow dish and pour the marinade over them. Ensure the fish are well-coated. Cover and refrigerate for at least 30 minutes.

Smoking/Grilling the Fish

    Prepare the Grill/Smoker

    If using a smoker, soak the wood chips in water for at least 30 minutes. If grilling, set up the charcoal for indirect heat.

    Add the Wood Chips

    For a smoker, add the soaked wood chips to the smoker box or directly on the coals. For grilling, place the wood chips in a foil pouch with holes poked in it.

    Place the Fish on the Grill/Smoker

    Once the grill/smoker reaches the desired temperature (around 225-250°F or 107-121°C), place the marinated fish on the grill grates or in the smoker. Close the lid.

    Cook the Fish

    Smoke or grill the fish for about 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.

    Serve

    Remove the fish from the grill/smoker, garnish with fresh herbs, and serve immediately.
