Sausage Preparation

Prepare the Meat
Start by grinding the pork shoulder and beef chuck through a meat grinder fitted with a medium hole plate.

Add Fatback
Grind the pork fatback and mix it with the ground meat in a large bowl.

Season the Mixture
Add salt, black pepper, garlic powder, paprika, cayenne pepper, and crushed red pepper flakes to the meat mixture. Mix thoroughly with your hands.

Add Ice Water
Gradually add the ice water to the meat mixture, mixing until the mixture is sticky and well combined.

Prepare Hog Casings
Rinse the hog casings under cool water and soak them in warm water for about 30 minutes.

Stuff the Sausage
Fit a sausage stuffer with the hog casings and carefully stuff the casings with the sausage mixture, making sure to leave some space for expansion.

Tie Off the Sausage
Twist the sausages into 6-inch links and tie off the ends securely.

Combine Ingredients
In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and garlic powder.

Simmer the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally. Allow it to cook for about 15-20 minutes until it thickens slightly.

Taste the sauce and adjust seasoning with salt and black pepper as needed.
