Prepare the Chicken
Rinse the chicken halves under cold water and pat dry with paper towels.

Marinate the Chicken
Rub the marinade all over the chicken halves, ensuring it gets under the skin. Cover and refrigerate for at least 2 hours or overnight for best results.
Smoking

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

Add Wood Chips to Smoker
Drain the wood chips and place them in the smoker box. If using a charcoal grill, add the soaked chips directly onto the coals.

Smoke the Chicken
Place the marinated chicken halves skin-side up on the smoker rack. Close the lid and smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).
Serving

Rest and Serve
Once cooked, remove the chicken from the smoker and let it rest for 10-15 minutes before carving. Serve warm.
