Prepare the Brisket
Trim excess fat off the brisket, leaving about 1/4 inch of fat for flavor.

Make the Spice Rub
In a bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.

Apply the Spice Rub
Generously rub the spice mixture all over the brisket, ensuring it is evenly coated. Wrap in plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Cooking

Preheat the Smoker
Preheat your smoker to a temperature of 225°F (107°C).

Smoke the Brisket
Place the brisket in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

Cube the Brisket
Once cooked, remove the brisket and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

Toss with BBQ Sauce
In a large bowl, combine the cubed brisket with BBQ sauce. Toss until evenly coated.

Return the sauced brisket cubes to the smoker and cook for an additional 1-2 hours at 250°F (121°C), until caramelized and crispy.
