Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and black pepper to create a marinade. Add the chicken thighs to the bowl and coat them evenly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Grilling

  1. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

  2. 3

    Grill the Chicken

Remove the chicken from the marinade and shake off any excess. Place the chicken thighs on the grill. Grill for about 6-7 minutes on one side, then flip them over.

  3. 4

    Add BBQ Sauce

After flipping the chicken, brush a generous amount of BBQ sauce on the grilled side. Grill for another 6-7 minutes, until the chicken is cooked through (internal temperature should reach 165°F/75°C).

  4. 5

    Finish Cooking

In the last few minutes, flip the chicken again and brush more BBQ sauce on the other side, allowing it to caramelize slightly on the grill.

Serving

  1. 6

    Serve the Chicken

Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes before serving. Serve with additional BBQ sauce on the side if desired.

  2. 7

    Prepare Sides

If serving sides, cook corn on the cob in boiling water for about 5-7 minutes until tender. Serve coleslaw in a bowl alongside the BBQ chicken.
