Salad Preparation

Prepare the Duck
Preheat the oven to 375°F (190°C). Season the duck breasts with salt and pepper. Place them skin-side up on a baking sheet and roast in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.

Prepare the Salad Base
In a large salad bowl, add the fresh spinach, julienne vegetables, sliced Roma tomatoes, and red onion. Toss gently to combine.

Add Cheese and Nuts
Crumble the bleu cheese over the salad and sprinkle the walnuts on top.

Make the Dressing
Add the apple cider vinegar, Dijon mustard, honey, and olive oil to the skillet with the bacon fat. Whisk the mixture over medium heat until heated through and well combined. Adjust seasoning with salt and black pepper to taste.
Combine and Serve

Assemble the Salad
Slice the roasted duck and place it on top of the salad mixture. Drizzle the warm bacon dressing over the salad and toss gently to combine.
