Preparation of Chuck Roast

    Season the Chuck Roast

    Pat the chuck roast dry with paper towels. Rub the entire surface with salt and black pepper, ensuring an even coating.

    Sear the Chuck Roast

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chuck roast and sear for 3-4 minutes on each side until a brown crust forms.

    Cook the Chuck Roast

    Transfer the seared chuck roast to a slow cooker. Cook on low for 8 hours or on high for 4 hours, until the meat is tender and easily shreds with a fork.

    Prepare the Toppings

    While the chuck roast is cooking, prepare the toppings. Slice the cucumber, thinly slice the red onion, and dice the tomato. Set aside.

    Make the Fennel Cream

    In a bowl, combine fennel cream ingredients (if making from scratch) or simply measure out fennel cream if using store-bought. Adjust seasoning to taste.

Assembly

    Shred the Chuck Roast

    Once the chuck roast is done cooking, remove it from the slow cooker and shred it using two forks.

    On a plate, place a generous portion of shredded chuck roast. Top with shredded cheddar cheese, sliced cucumber, fennel cream, red onion, and diced tomato. Serve warm.
