Duck Preparation

    Prepare the Duck

    Clean the duck thoroughly and pat it dry with paper towels.

    Season the Duck

    Rub the inside and outside of the duck with salt and Chinese five-spice powder. Let it sit for at least 1 hour or overnight in the refrigerator.

    Boil the Duck

    In a large pot, combine water and rice vinegar. Bring to a boil and carefully lower the duck into the pot, boiling for 10 minutes.

    Prepare the Glaze

    In a small pot, combine honey with a little water and heat until it becomes a syrup-like consistency.

    Glaze the Duck

    After boiling, remove the duck and brush it generously with the honey glaze. Let the duck air dry for at least 30 minutes.

    Roast the Duck

    Preheat your oven to 375°F (190°C). Place the duck on a rack in a roasting pan and roast for about 1.5 hours, basting occasionally with the remaining honey glaze.

Pickled Vegetables

    Prepare the Pickling Solution

    In a bowl, combine rice vinegar, sugar, and salt. Stir until dissolved.

    Pickle the Vegetables

    Add the julienned carrot, cucumber, and radish into the pickling solution. Let it sit for at least 30 minutes.

Peanut Sauce

    Mix the Sauce

    In a bowl, combine peanut butter, soy sauce, lime juice, honey, water, and chili paste. Whisk until smooth and adjust with more water if necessary.

Serving

    Serve the Dish

    Slice the roasted duck and serve with thin pancakes or steamed buns, pickled vegetables, and peanut sauce. Garnish with sliced green onions.
