Chicken Preparation

    Marinate the Chicken

    In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the skinless chicken breasts to the marinade and ensure they are well-coated. Let it marinate for at least 30 minutes.

    Char-Broil the Chicken

    Preheat your char-broiler or grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Vegetable Preparation

    Steam the Vegetables

    In a saucepan, add 1 cup of water and bring it to a boil. Place broccoli florets, sliced carrot, and zucchini in a steamer basket over the boiling water. Cover and steam for about 5-7 minutes or until vegetables are tender yet crisp.

Optional Salmon Substitute Preparation

    Prepare the Salmon

    If substituting salmon, follow the same marinating process as for the chicken. Grill on medium-high heat for about 5-6 minutes on each side or until the salmon flakes easily with a fork.

Serving

    Plate the Dish

    Once chicken (or salmon) and vegetables are cooked, place the protein on a plate and arrange the steamed vegetables beside it. Garnish with extra lemon slices if desired.
