Method

Prepare the Salad Base

    Chop and Prepare Vegetables

    Wash and dry the mixed salad greens. Slice the avocado, Roma tomatoes, and yellow bell pepper into bite-sized pieces. Chop the scallions and finely chop the cilantro. Slice the jalapeño, removing seeds if desired for less heat.

    Assemble the Salad

    In a large bowl, combine the mixed salad greens, avocado, Roma tomatoes, yellow bell pepper, scallions, cilantro, and jalapeño. Toss gently to combine.

Cook the Blackened Shrimp

    Season the Shrimp

    In a bowl, toss the shrimp with Cajun seasoning until evenly coated.

    Cook the Shrimp

    Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they are blackened and cooked through. Remove from heat.

Make the Jalapeño Mango Vinaigrette

    Blend the Vinaigrette Ingredients

    In a blender, combine the diced mango, olive oil, apple cider vinegar, honey, minced jalapeño, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Assemble and Serve

    Top the prepared salad with the blackened shrimp. Drizzle the jalapeño mango vinaigrette over the salad and toss gently to coat. Serve immediately.
