Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add cold water to the flour mixture, stirring until the dough comes together. Do not overmix.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine shredded mozzarella cheese, pepperoni slices, chopped green bell pepper, chopped onion, Italian seasoning, and garlic powder. Mix well to combine.

Assembly and Baking

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8-inch thickness.

    Cut the Dough

    Using a round cutter (about 3 inches in diameter), cut out circles from the dough.

    Place a tablespoon of filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal.

    In a small bowl, whisk together the egg and water. Brush the egg wash over the tops of the puffs.
