1. Prepare the Sugar Mixture

In a large pot, combine the water, granulated sugar, and brown sugar. Heat over medium heat, stirring until the sugars are completely dissolved.

Remove the pot from the heat. Stir in the vanilla extract, root beer extract, and optional flavorings (sassafras root and wintergreen) if using.

3. Cool the Mixture

Allow the mixture to cool to room temperature. This is important to avoid killing the yeast when added.

4. Add Yeast

Once the mixture is cool, sprinkle the active dry yeast over the surface and stir gently to combine.

Pour the root beer mixture into clean, sanitized bottles, leaving about an inch of space at the top.

Seal the bottles tightly with caps. Ensure there are no leaks to prevent loss of carbonation.

Let the bottles sit at room temperature for 2-3 days. Check daily for carbonation by gently squeezing the bottles. When they feel firm, the fermentation is complete.

Once fermentation is complete, refrigerate the bottles for at least 24 hours before serving to chill the root beer.
