Cut the Potatoes
Cut the washed (and peeled) potatoes into even strips, about 1/4 inch thick. Make sure the cuts are uniform for even cooking.

Soak the Cut Potatoes
Place the cut potato strips in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps to achieve a crispier fry.

Heat the Oil
In a deep fryer or a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.

Dry the Potatoes
After soaking, drain the potatoes and dry them thoroughly with a clean kitchen towel or paper towels. Removing moisture is crucial for achieving crispy fries.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry them for about 5-6 minutes or until they are golden brown. Avoid overcrowding the pot to maintain the oil temperature.

Once fried, remove the fries from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
