Method
Preparing the Chili
- 1
Cook the Ground Beef
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- 2
- 3
Stir in Spices and Tomatoes
Add the chili powder, cumin, salt, and black pepper to the skillet. Mix well, then add the canned diced tomatoes and kidney beans (drained and rinsed). Stir to combine.
- 4
Simmer the Chili
Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.
Making the Cheddar Cheese Sauce
- 5
- 6
Add Flour
Whisk in the flour until smooth and cook for 1-2 minutes to create a roux.
- 7
Add Milk
Slowly pour in the milk while whisking continuously to prevent lumps. Cook until the sauce thickens, about 3-5 minutes.
- 8
Add Cheese and Seasoning
Remove from heat and stir in the shredded cheddar cheese and mustard until melted and smooth. Season with salt to taste.
Assembling the Chili Cheese Dogs
- 9
Cook Hot Dogs
Grill or boil the hot dogs according to your preference until heated through.
- 10
Prepare the Buns
Warm the hot dog buns if desired, either by toasting them lightly or wrapping them in foil and placing them in a warm oven.
- 11
Assemble the Chili Cheese Dogs
Place a hot dog in each bun, top with a generous scoop of chili, and drizzle with the cheddar cheese sauce.
- 12
Serve
Serve immediately while hot, garnished with additional toppings if desired (like diced onions or jalapeños).
