Method
Preparing the Fries

Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into thick strips to form the fries.

Soaking the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Drying the Fries
Drain the fries and pat them dry with paper towels to remove moisture.

Salting the Fries
Remove the fries from the oil and place them on a paper towel-lined plate. Sprinkle salt over the hot fries to taste.
Making the Cheddar Cheese Sauce

Making the Roux
Add the all-purpose flour to the melted butter and whisk continuously for about 2 minutes until it forms a smooth paste (roux).

Adding the Milk
Gradually pour in the milk while continuing to whisk to prevent lumps from forming.

Thickening the Sauce
Cook the mixture, stirring constantly, until it thickens, about 3-5 minutes.

Adding the Cheese and Spices
Reduce the heat to low, and add the cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir until the cheese is completely melted and the sauce is smooth.
Serving

Plating the Cheese Fries
Serve the hot fries on a plate and generously drizzle the cheddar cheese sauce over them. Enjoy immediately!
