Preparation of Beef

Sear the Beef
In a large skillet over medium-high heat, sear the beef chuck roast on all sides until browned (about 4-5 minutes per side).

Slow Cook the Beef
Transfer the seared beef to a slow cooker. Cover and cook on low for 6-8 hours or until the beef is tender and easily shredded.
Preparation of BBQ Sauce

Mix the Sauce Ingredients
In a bowl, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until well blended.

Add Sauce to Beef
Once the beef is done cooking, remove it from the slow cooker and shred it using two forks. Mix the shredded beef with the BBQ sauce in the slow cooker.

Prepare the Buns
Lightly toast the hamburger buns if desired.

Assemble the Sandwiches
Spoon the BBQ beef onto the bottom half of each bun. Top with coleslaw and pickles if using, then place the top half of the bun on each sandwich.
