Directions
1. Prepare the Base
In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
2. Sauté the Vegetables
Add butter to the pot with the bacon fat. Once melted, add the diced onion and celery, cooking until softened (about 5 minutes).
3. Add Potatoes and Broth
Stir in the diced potatoes, clams, chicken broth, thyme, and black pepper. Bring to a boil, then reduce heat and simmer until the potatoes are tender (about 15-20 minutes).
4. Finish with Cream
Stir in the heavy cream and cooked bacon. Heat through without boiling, and season with salt to taste.
