Burger Preparation
Form the Patties
In a bowl, combine the ground chuck with salt and black pepper. Divide the mixture into two equal portions and form into patties.
Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Set aside on paper towels to drain.
Cook the Patties
In the same skillet, cook the patties over medium-high heat for about 4-5 minutes on each side, or until desired doneness.
Add Cheese
During the last minute of cooking, place two slices of cheddar cheese on each patty to melt.
Assemble the Burger
Prepare the Mayo
In a small bowl, mix the mayonnaise with pickled mustard seeds.
Assemble
Spread red relish on the bottom half of each bun. Place the cheese-topped patty on the buns, add two slices of bacon on top of each patty, and spread the mustard seed mayo on the top bun. Close the burger and serve.
