Prepare the Dates
In a bowl, combine the chopped dates and boiling water. Let it sit for about 15 minutes until the dates soften.

Preheat Oven
Preheat your oven to 350°F (175°C). Grease a baking dish or individual ramekins.

Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt.

Cream Butter and Sugar
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

Combine Mixtures
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the soaked dates along with their water.

Bake
Pour the batter into the prepared baking dish or ramekins. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Prepare Caramel Sauce
In a saucepan, combine 1 cup of brown sugar, 1/2 cup of heavy cream, and 1/4 cup of unsalted butter over medium heat. Stir until smooth and simmer for 5 minutes.

Serve warm sticky toffee pudding with vanilla bean ice cream and drizzle with caramel sauce.
