Cooking the Mahi Mahi

Prepare the Spice Rub

In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

Season the Fish

Rub the spice mixture evenly over both sides of the Mahi Mahi fillets.

Cook the Fish

Heat olive oil in a skillet over medium-high heat. Add the fillets and cook for about 4-5 minutes on each side, until blackened and cooked through. Remove from pan and set aside.

Making Mashed Potatoes

Boil the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.

Preparing Chorizo and Corn

Cook the Chorizo

In a skillet, heat olive oil over medium heat. Add chorizo sausage, breaking it up with a spoon, and cook until browned.

Add Corn

Stir in the corn and cook for an additional 2-3 minutes until heated through.

Serving

Plate the Dish

Serve the blackened Mahi Mahi on a bed of creamy mashed potatoes, topped with the chorizo and corn mixture. Garnish with cilantro.
