    Prepare the Rice

    In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Sauté the Mushrooms

    While the rice is cooking, clean and slice the shiitake mushrooms. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant. Add the sliced shiitake mushrooms and cook for about 5-7 minutes or until they are tender and browned.

    Add Spinach

    Add the fresh spinach to the skillet with the mushrooms. Cook for an additional 2-3 minutes, stirring until the spinach is wilted.

    Season the Mixture

    Stir in the soy sauce, salt, and black pepper. Mix well and remove from heat.

    Assemble the Zen Bowl

    Fluff the cooked brown rice with a fork and divide it into serving bowls. Top each bowl with the mushroom and spinach mixture. Garnish with sliced green onions and sprinkle sesame seeds on top.
