Press the Tofu
Drain the firm tofu and wrap it in a clean kitchen towel. Place a heavy object on top to press out excess moisture for about 15-20 minutes.

Prepare the Sauce
In a small bowl, mix the soy sauce, grated ginger, and minced garlic. Set aside.

Chop the Cashews
Roughly chop the cashews and set aside for topping.
Cooking

Cube and Coat the Tofu
Once the tofu has been pressed, cut it into small cubes. In a bowl, toss the tofu cubes with cornstarch until evenly coated.

Fry the Tofu
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the tofu cubes in batches, frying until they are golden brown and crispy on all sides, about 4-5 minutes per batch. Remove and drain on paper towels.

Add Sauce to Tofu
Return the crispy tofu to the skillet, pour the prepared sauce over the tofu, and stir to coat. Cook for an additional 2-3 minutes until heated through.

Assemble the Wraps
Take a lettuce leaf, spoon some of the tofu mixture into the center, and top with chopped cashews. Fold the sides of the lettuce over the filling and enjoy!
