Method
Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Then, transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
Prepare Tuna

Dice the Tuna
Cut the sushi grade tuna into small cubes, about 1/2 inch in size.

Marinate the Tuna
In a bowl, combine the diced tuna with soy sauce and sesame oil. Toss gently to coat and let it marinate for about 10 minutes.

Chop Green Onions
Finely chop the green onions to use as a garnish.
Assemble the Sushi Stack

Layer the Ingredients
In a small ring mold or a small bowl, layer the seasoned sushi rice at the bottom, followed by the marinated tuna, and finally the chopped green onions.

Add Prawn Crackers
Carefully remove the mold and place the sushi stack on a plate. Serve with seasoned prawn crackers on the side.

Garnish and Serve
