Method

Prepare Home Fries

    Chop the Potatoes and Onion

    Wash and dice the potatoes into small cubes. Finely chop the onion.

    Cook the Home Fries

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, chopped onion, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally until the potatoes are golden brown and cooked through.

Cook Sausage and Bacon

    Cook the Sausage

    In a separate skillet, cook the jalapeño pork sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.

    Cook the Bacon

    Add the smoked bacon to the sausage skillet and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare Eggs

    Cook the Eggs

    In the same pan used for the sausage and bacon, crack the three eggs and cook them to your desired doneness (sunny-side up, scrambled, etc.). Season with salt and pepper.

Roast Tomato

    Prepare the Tomato

    Preheat the oven to 400°F (200°C). Cut the large tomato in half and drizzle with olive oil and sprinkle with salt.

    Roast the Tomato

    Place the tomato halves on a baking tray and roast in the oven for about 20 minutes until soft and slightly caramelized.

Toast the Bread

    Toast Multi-Grain Bread

    While the tomato is roasting, toast the slices of multi-grain bread until golden brown.
