Prepare the Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces. Season with salt and black pepper.

Coat the Chicken
Toss the seasoned chicken pieces in cornstarch until fully coated. Shake off any excess cornstarch.
Cooking

Cook the Chicken
In a skillet or pan, heat a tablespoon of oil over medium-high heat. Add the coated chicken pieces and cook for 5-7 minutes until golden brown and cooked through, stirring occasionally.

Make the Sauce
While the chicken is cooking, in a small bowl, mix together the Thai chili paste, soy sauce, honey, lime juice, minced garlic, and minced ginger until well combined.

Combine Chicken and Sauce
Once the chicken is cooked, pour the sauce over the chicken in the skillet. Stir well to coat the chicken evenly and cook for an additional 2-3 minutes until the sauce thickens slightly.

Remove the skillet from heat. Sprinkle the cooked chicken bites with chopped cilantro and sesame seeds.
