Prepare the Chicken
Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.

Make the Sauce
In a bowl, combine the sweet chili sauce and sriracha. Mix well and set aside.

Cook the Chicken
In a large skillet over medium-high heat, add a tablespoon of oil. Once hot, add the chicken pieces and cook until browned and fully cooked through, about 5-7 minutes.

Pour the sweet chili and sriracha mixture over the cooked chicken. Stir to coat the chicken evenly and let it simmer for 2-3 minutes until the sauce thickens slightly.

Prepare Cucumbers and Cashews
Slice the cucumber into thin rounds and roughly chop the cashews.

Transfer the chicken to a serving platter, top with sliced cucumbers, chopped cashews, and fresh cilantro. Serve with lime wedges on the side.
