Method

Cooking the Tenderloin

  1. 1

    Preparation

Remove the tenderloin filet from the refrigerator and allow it to come to room temperature for about 30 minutes.

  2. 2

    Seasoning

Rub the tenderloin with olive oil, then season generously with salt and black pepper on all sides.

  3. 3

    Searing

Heat a skillet over high heat until very hot. Add the tenderloin filet to the skillet and sear for 3-4 minutes on each side for medium-rare, or longer to achieve your desired level of doneness.

  4. 4

    Adding Aromatics

During the last 2 minutes of cooking, add the garlic cloves (crushed) and fresh rosemary to the skillet. Top the filet with butter for added richness.

  5. 5

    Resting

Remove the tenderloin from the skillet and let it rest on a cutting board for 5 minutes before slicing.

Optional Sides Preparation

  1. 6

    Preparing Asparagus

Trim the ends of the asparagus and toss them in olive oil, salt, and pepper. Grill or sauté for about 5-7 minutes until tender.

  2. 7

    Cooking Baby Potatoes

Boil baby potatoes in salted water until fork-tender (about 10-12 minutes). Drain and toss with olive oil, salt, and pepper before serving.
