Preparing Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing Fillings

    Prepare Vegetables

    Peel and julienne the cucumber, avocado, and carrot into thin strips.

    Prepare Shrimp

    If necessary, peel and devein the cooked shrimp. Set aside.

Assembling Sushi Cones

    Cut Nori Sheets

    Cut each nori sheet in half diagonally to create triangles.

    Fill the Cones

    Take a nori triangle and place a scoop of sushi rice on one corner. Top with a few pieces of cucumber, avocado, carrot, and shrimp.

    Roll the Cones

    Fold the nori over the filling to create a cone shape. Repeat with remaining ingredients.

    Garnish and Serve

    Sprinkle sesame seeds on top of each cone and serve with wasabi and pickled ginger on the side.
