    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

    Prepare the Vegetables

    While the quinoa is cooking, wash and dry the mixed greens. Chop the cucumber into bite-sized pieces, slice the strawberries, and dice the avocado.

    Grate the Cheese

    Shred or grate the aged cheddar cheese and set aside.

    Combine the Ingredients

    In a large salad bowl, combine the mixed greens, chopped cucumber, sliced strawberries, diced avocado, cooked quinoa, and grated aged cheddar cheese.

    Add the Seeds

    Sprinkle the roasted sunflower seeds over the salad mixture.

    In a small bowl, whisk together the white balsamic vinegar, olive oil, honey, salt, and black pepper until well combined.
