Pudding

Bourbon Crème Anglaise

Candied Pecans

Vanilla Bean Ice Cream

Method

Pudding

  1. 1

    Prepare Dates

In a bowl, combine the chopped Medjool dates and boiling water. Let them soak for about 20 minutes until softened.

  2. 2

    Mix Butter and Sugar

In a large mixing bowl, cream together the softened unsalted butter and brown sugar until light and fluffy.

  3. 3

    Add Eggs

Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.

  4. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the soaked dates along with any remaining liquid and vanilla extract.

  6. 6

    Bake

Pour the pudding mixture into a greased baking dish and bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Caramel Sauce

  1. 7

    Cook Caramel

In a saucepan over medium heat, combine the brown sugar and unsalted butter. Stir until the butter is melted and the mixture is smooth.

  2. 8

    Add Cream

Slowly pour in the heavy cream while stirring continuously. Bring the mixture to a gentle boil and cook for an additional 2-3 minutes until thickened. Remove from heat and stir in vanilla extract.

Bourbon Crème Anglaise

  1. 9

    Prepare Cream Base

In a saucepan, heat the milk and heavy cream over medium heat until just below boiling.

  2. 10

    Whisk Egg Yolks and Sugar

In a bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

  3. 11

    Temper Egg Mixture

Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to prevent curdling.

  4. 12

    Cook the Custard

Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon. Do not let it boil.

  5. 13

    Add Bourbon and Vanilla

Remove from the heat and stir in the bourbon and vanilla bean scrapings. Let cool before serving.

Candied Pecans

  1. 14

    Prepare Pecans

In a skillet, melt the butter over medium heat. Add the chopped pecans and granulated sugar.

  2. 15

    Candy Pecans

Cook, stirring frequently, until the pecans are toasted and caramelized, about 5-7 minutes. Add a pinch of salt and stir to combine. Remove from heat and let cool.
