Method

Steak Preparation

  1. 1

    Season and Cook the Steak

Season the steak generously with salt and black pepper on both sides. Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

Salad Assembly

  1. 2

    Prepare the Salad Base

In a large bowl, combine the fresh artisan greens, halved grape tomatoes, diced avocado, thinly sliced red onion, and roasted corn. Toss gently to mix.

  2. 3

    Add Cheeses

Sprinkle the feta cheese and crumbled goat cheese over the salad mixture.

Vinaigrette Preparation

  1. 4

    Make the Vinaigrette

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, black pepper, and red pepper flakes until well combined.

  2. 5

    Dress the Salad

Drizzle the vinaigrette over the salad and toss gently to coat the ingredients evenly.

Crostini Preparation

  1. 6

    Prepare the Crostinis

Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch slices and place them on a baking sheet. Brush each slice with olive oil and top them with goat cheese and fresh thyme. Bake in the preheated oven for 10-12 minutes, or until golden and crispy.

Final Assembly

  1. 7

    Combine and Serve

Slice the rested steak thinly against the grain. Top the salad with the sliced steak and serve with goat cheese crostinis on the side.
