Preparing the Chimichurri Sauce

    Make the Chimichurri

    In a bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, red pepper flakes, olive oil, salt, and black pepper. Mix well until all ingredients are combined. Set aside.

Making the Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to make fries.

    Fry the Potatoes

    Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potato strips in batches until they are golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Cooking the Steak

    Season the Steak

    Pat the prime sirloin dry with paper towels. Season both sides generously with salt and black pepper.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the sirloin and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Transfer to a cutting board and let rest for a few minutes before slicing.

Assembling the Dish

    Prepare the Arugula Salad

    In a bowl, toss the arugula with lemon juice, olive oil, salt, and black pepper.

    Slice the steak against the grain and serve it alongside the fresh cut fries. Top the steak with chimichurri sauce and serve the arugula salad on the side.
