    In a large pot, bring 4 cups of water to a boil. Add 1 cup of quinoa and 1 cup of farro. Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the grains are tender and the water is absorbed. Fluff with a fork and set aside.

    Cook the Salmon

    Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 2 tablespoons of olive oil and sprinkle with 1 teaspoon of salt and 1 teaspoon of black pepper. Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Lemon Herb Sauce

    Make the Lemon Herb Sauce

    In a small bowl, whisk together 1 tablespoon of chopped parsley, 1 tablespoon of chopped dill, 2 tablespoons of lemon juice, 1 teaspoon of minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined. Set aside.

    Sauté the Vegetables

    In a skillet over medium heat, add a drizzle of olive oil. Add 1 cup of trimmed asparagus, 1 cup of sliced carrots, and 1 cup of sliced zucchini. Sauté for about 5-7 minutes, or until the vegetables are tender but still vibrant in color. Season with salt and pepper to taste.
