Method
Roasting the Tomatoes

Prepare the Oven
Preheat your oven to 400°F (200°C).

Prepare the Tomatoes
Cut the Roma tomatoes in half lengthwise and place them cut side up on a baking sheet.

Season the Tomatoes
Drizzle the tomatoes with 2 tablespoons of olive oil, and sprinkle with salt and black pepper.

Roast the Tomatoes
Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are soft and slightly caramelized.

Add Fresh Basil
Remove from the oven and sprinkle with fresh basil leaves. Set aside to cool.
Making the Whipped Feta

Combine Ingredients
In a food processor, combine the feta cheese, cream cheese, garlic clove, olive oil, lemon juice, and fresh thyme leaves.

Blend to Creamy Consistency
Blend until smooth and creamy. Taste and adjust seasoning if necessary.

Transfer to Serving Bowl
Transfer the whipped feta to a serving bowl and set aside.

Slice the Baguette
Slice the baguette into 1/2-inch thick slices.

Rub with Garlic
Once toasted, rub one side of each slice with a cut garlic clove for added flavor.
