Wash and chop the red bell pepper, carrot, zucchini, and broccoli into bite-sized pieces. Set aside.

Drain the tofu and cut it into cubes. Pat dry with a paper towel to remove excess moisture.
Cooking the Curry

Stir in the minced garlic and ginger. Sauté for an additional 1-2 minutes until fragrant.

Add the red curry paste to the pot and stir well to combine. Cook for another 1-2 minutes.
