Prepare Quinoa

Rinse Quinoa
Place 1 cup of quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes. This helps remove the natural coating that can make quinoa taste bitter.

Preheat Oven
Preheat your oven to 425°F (220°C).

Season and Roast
On a baking sheet, toss the chopped vegetables with olive oil, salt, and black pepper. Spread them out in a single layer and roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.

Combine Ingredients
In a small bowl, whisk together the tahini, lemon juice, minced garlic, water, salt, and black pepper until smooth. Adjust the consistency with more water if needed.
Assemble Bowl

Combine Quinoa and Vegetables
In a large bowl, combine the cooked quinoa and roasted vegetables. Toss gently to combine.

Drizzle Dressing
Drizzle the tahini dressing over the quinoa and vegetables. Toss gently to coat everything evenly.

If desired, sprinkle with fresh parsley and sesame seeds before serving.
