Pasta

Method

Cooking Pasta

  1. 1

    Boil the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Cooking Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the broccoli, bell pepper, carrot, and zucchini, and cook for about 5-7 minutes or until the vegetables are tender but still crisp.

  2. 3

    Add Tomatoes

Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they are slightly softened.

Making the Sauce

  1. 4

    Combine Ingredients

Pour the vegetable broth into the skillet with the sautéed vegetables. Season with salt and black pepper. Stir to combine and let simmer for about 3-5 minutes.

Combining Pasta and Sauce

  1. 5

    Mix Everything Together

Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the sauce and vegetables. If necessary, add more vegetable broth to reach desired consistency.

Garnishing

  1. 6

    Serve and Garnish

Remove from heat and stir in grated Parmesan cheese and chopped fresh basil. Serve immediately, garnished with extra Parmesan and basil if desired.
