Chop the vegetables
Dice the bell pepper, zucchini, and carrot into small pieces. Chop the green onions, separating the white and green parts.

Prepare the cashews
If desired, lightly toast the cashews in a dry skillet over medium heat for 3-5 minutes until fragrant.
Cooking

Cook the mushrooms
Heat a tablespoon of sesame oil in a large skillet over medium-high heat. Add the shiitake mushrooms and sauté for 5 minutes until they are crispy and golden brown. Remove them from the skillet and set aside.

Sauté the wild mushrooms
In the same skillet, add another tablespoon of sesame oil if needed. Add the wild mushrooms and sauté for 4-5 minutes until tender. Remove and set aside with the shiitake mushrooms.

Sauté the vegetables
Add the diced bell pepper, zucchini, and carrot to the skillet. Sauté for 3-4 minutes until they are tender but still crisp. Add the white parts of the green onions and cook for another minute.

Make the sauce
In a small bowl, mix together the soy sauce, minced garlic, grated ginger, and honey or maple syrup. Pour this sauce over the sautéed vegetables and stir well to combine.

Serve the Zen Bowl
Spoon the mushroom and vegetable mixture into bowls, top with toasted cashews, and garnish with the green parts of the green onions. Enjoy your Mushroom Zen Bowl!
