Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each Brussels sprout in half lengthwise.

Cook Pancetta
In a large skillet over medium heat, add the pancetta bacon. Cook for about 5-7 minutes, stirring occasionally, until crispy. Remove the pancetta from the skillet and set aside, leaving the rendered fat in the pan.

Prepare Miso Maple Glaze
In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, and minced garlic until smooth. Set aside.

Add Miso Maple Glaze
Pour the miso maple glaze over the sautéed Brussels sprouts. Stir well to coat the sprouts evenly in the glaze. Cook for an additional 2-3 minutes until the glaze is heated through and slightly thickened.
Finishing Touches

Add Pancetta and Almonds
Return the crispy pancetta to the skillet, and sprinkle the chopped toasted almonds over the Brussels sprouts. Toss gently to combine.

Transfer the maple glazed Brussels sprouts to a serving dish. Garnish with additional toasted almonds if desired, and serve warm.
