Prepare the Grilled Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill (if using). Mix well. Place the salmon fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Salmon

    Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Cook for about 5-6 minutes per side, or until the salmon flakes easily with a fork.

Prepare the Jasmine Rice

    Rinse the Rice

    In a fine-mesh strainer, rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and helps prevent the rice from being gummy.

    In a medium saucepan, combine rinsed jasmine rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Slice the zucchini, bell pepper, and carrot into bite-sized pieces.
