    Cook the Bacon

    In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and drain on paper towels.

    Prepare the Eggs

    In a bowl, whisk the eggs with salt and pepper until well combined.

    Cook the Eggs

    In the same skillet used for bacon, add butter and let it melt. Pour in the whisked eggs. Allow them to cook for a minute, then gently fold the edges toward the center. Repeat until the eggs are mostly set but still slightly runny.

    Add Cheese and Bacon

    Sprinkle the shredded cheddar cheese and cooked bacon over the eggs. Fold the eggs gently to combine and let the cheese melt.

    Toast the Brioche Buns

    While the eggs finish cooking, slice the brioche buns in half and toast them in the skillet until golden brown.

    Assemble

    Spoon the folded eggs onto the bottom half of each toasted brioche bun. Place the top half of the bun over the eggs.

    Cook the Potatoes

    In a large skillet over medium heat, add olive oil. Once hot, add the diced potatoes and cook for about 10 minutes, stirring occasionally.

    Add Onion and Seasoning

    Add the chopped onion to the skillet. Sprinkle with paprika, salt, and pepper. Continue to cook for another 10-15 minutes until the potatoes are golden brown and tender.

    Serve

    Remove from heat and serve the home fries alongside the folded eggs on the brioche bun.
