Preparation of Home Fries

Prepare the Potatoes
Peel and dice the russet potatoes into bite-sized cubes. Rinse them under cold water and then boil them in salted water for about 10-15 minutes until tender. Drain and set aside.

Fry the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the boiled potatoes and cook until they are golden and crispy, about 5-7 minutes. Season with salt and pepper.

Prepare and Roast Vegetables
Preheat your oven to 400°F (200°C). Chop the mixed bell peppers, zucchini, and red onion into bite-sized pieces. Toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Poach the Eggs
Bring a pot of water to simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and place on a paper towel to drain.

Assemble the Farmers Hash
In a large serving platter, layer the home fries, followed by the cooked pancetta and sausage. Top with the roasted vegetables and the poached eggs. Drizzle with hollandaise sauce and garnish with fresh herbs and pickled onions.
