For the Crispy Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Dredging Mixture

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Soak in Buttermilk

    Place the calamari rings in a separate bowl and pour the buttermilk over them. Allow them to soak for at least 30 minutes.

    Heat the Oil

    In a deep frying pan or Dutch oven, heat the vegetable oil to 350°F (175°C).

    Dredge the Calamari

    Remove the calamari from the buttermilk and shake off excess. Dredge each ring in the flour mixture until fully coated.

    Fry the Calamari

    Carefully place the coated calamari rings in the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

For the Spicy Aioli

    Combine Ingredients

    In a medium bowl, whisk together mayonnaise, sriracha sauce, lemon juice, minced garlic, salt, and black pepper until well blended.

    Taste the aioli and adjust seasoning with additional salt and black pepper if needed.
