Sauté the Greens
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the fresh spinach and arugula, sautéing until wilted (about 2-3 minutes). Remove from heat and set aside.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water one by one. Poach for about 3-4 minutes for a soft yolk. Remove with a slotted spoon and place on a plate lined with paper towels.

Toast the English Muffins
While the eggs are poaching, toast the English muffins until golden brown. Place the toasted halves on plates.

Wash and chop the mixed fresh fruit into bite-sized pieces. Serve in a bowl on the side.
