    Split each English muffin in half and toast them until golden brown. Set aside.

Making Hollandaise Sauce

    In a small saucepan, melt the unsalted butter over low heat. Once melted, set aside to cool slightly.

    In a medium bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt until well combined.

Poaching Eggs

    Fill a large saucepan with water and bring it to a gentle simmer. Add a splash of vinegar (optional) to help the eggs hold their shape.
