Preparation of Cake

Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it reaches the desired temperature for baking the lava cakes.

Melt Chocolate and Butter
In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until completely melted and smooth.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together granulated sugar, large eggs, and large egg yolks until the mixture becomes pale and slightly thickened, about 2-3 minutes.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture until well combined. Add the vanilla extract and mix until smooth.

Add Dry Ingredients
Sift the all-purpose flour and salt over the chocolate mixture. Gently fold until just combined, being careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute. Carefully run a knife around the edges to loosen the cakes.

Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream and a sprinkle of chocolate shavings.
