Prepare the Chicken
Cut the chicken breast into strips, about 1 inch wide. Pat the strips dry with paper towels.

Bread the Chicken
Coat each chicken strip in flour, shaking off the excess. Dip into the beaten eggs, letting the excess drip off, then coat in the bread crumb mixture, pressing lightly to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C). You can test if it's ready by dropping in a small piece of bread; if it sizzles, it’s ready.

Fry the Chicken
Carefully place the breaded chicken strips into the hot oil. Fry in batches for about 4-5 minutes on each side or until they are golden brown and cooked through. Transfer to a plate lined with paper towels to drain excess oil.
