Prepare the Chicken
Cut the chicken breasts into strips, approximately 1 inch wide.

Dredge the Chicken Strips
Dip each chicken strip first into the flour, shaking off excess, then into the beaten eggs, and lastly into the breadcrumb mixture, ensuring each piece is well coated.

Heat the Oil
In a large skillet, heat about 2 cups of oil over medium-high heat until hot but not smoking.

Fry the Chicken
Carefully add the breaded chicken strips to the hot oil in batches, avoiding overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through, flipping halfway through.

Drain and Keep Warm
Remove the chicken fingers from the oil and place them on a paper towel-lined plate to drain excess oil. Keep warm in a low oven while frying remaining batches.

Cut the Potatoes
Peel the potatoes (if desired) and cut them into strips, about 1/4 inch thick.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with paper towels.

In a separate large skillet or deep fryer, heat about 2 cups of oil over medium-high heat until hot.

Fry the Potatoes
Add the potato strips to the hot oil in batches, frying for about 4-5 minutes until golden brown and crispy. Remove and drain on paper towels, then season with salt immediately.
