Dressing Preparation

    Make the Dressing

    In a bowl, mash the garlic and anchovy fillets together until smooth. Add the egg yolk, Dijon mustard, and lemon juice and whisk until well combined.

    Emulsify the Dressing

    Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing. Stir in the grated Grana Padano cheese and season with salt and black pepper to taste.

Salad Assembly

    Prepare the Lettuce

    Wash and dry the Romaine lettuce, then chop it into bite-sized pieces.

    Combine Ingredients

    In a large salad bowl, combine the Romaine lettuce, croutons, and half of the grated Grana Padano cheese.

    Add Dressing

    Drizzle the house-made dressing over the salad and toss to combine. Top with the remaining Grana Padano cheese.

Garlic Ciabatta Baguette

    Prepare the Garlic Butter

    Melt the butter in a small saucepan over low heat. Add the minced garlic and chopped parsley, and cook for 1-2 minutes until fragrant.

    Toast the Baguette

    Slice the ciabatta baguette in half and brush the garlic butter generously over the cut sides. Toast in a preheated oven at 375°F (190°C) for about 10 minutes or until golden brown.
