Brioche Bites Preparation

Prepare the Brioche Bread
Cut the brioche bread into bite-sized cubes, about 1-inch in size. Set aside.

Make the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.

Soak the Bread
Add the brioche cubes to the egg mixture, gently folding them to coat each piece. Let them soak for about 15 minutes.

Cook the Brioche Bites
In a large skillet, melt the butter over medium heat. Once melted, add the soaked brioche cubes, cooking in batches if necessary. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

Make the Caramel
In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly. The sugar will begin to melt and turn a light amber color.

Add Butter
Once the sugar has melted completely, add the unsalted butter and stir until melted and combined.

Finish the Sauce
Slowly pour in the heavy cream while stirring. Be careful, as the mixture may bubble up. Stir until smooth. Add vanilla extract and a pinch of salt, stirring to combine.

Drizzle the warm caramel sauce over the brioche bites and serve immediately.
